Pago de los Capellanes wine tasting and pairing dinner: precision, history, and character in Ribera del Duero

On Tuesday, June 10, at Vinology Zurbano, we invite you to discover the timeless elegance of Pago de los Capellanes, one of the most admired wineries in the Ribera del Duero D.O. A pairing dinner dedicated to Tinto Fino in its purest form, born from vineyards worked with artisanal rigor and a constant search for excellence.

The story begins in the 15th century, when the chapel priests of Pedrosa de Duero received small plots of vineyards as payment for masses and prayers. That mosaic of land, known since then as “el pago de los capellanes” (the chapel priests' vineyard), eventually became an emblem of local viticulture.

Centuries later, Paco Rodero and Conchita Villa recovered part of those vineyards and founded a winery that, from the outset, was committed to uncompromising quality. Since its creation in 1996, Pago de los Capellanes has developed its own style: structured, long-lived, and elegant wines that accurately reflect the identity of the Ribera Burgalesa.

With the involvement of their daughter, Estefanía Rodero Villa, the family project continues today with a contemporary outlook that is committed and sensitive to the landscape.

Their philosophy is based on low yields, careful selection of plots and meticulous ageing in French oak. The result is some of the most renowned and admired red wines in the appellation.

During this exclusive pairing dinner, we will be joined by Estefanía Rodero, who will guide us through a careful selection of wines from Pago de los Capellanes, including unique expressions from their most representative plots, as well as labels from O Luar do Sil, their project in the Valdeorras DO. Each wine will be paired with a dish created for the occasion by our chef.
