What is Vinology?
Vinology is a philosophy of life dedicated to wine. Founded in 2010 by sommelier Pilar Oltra, our mission is to share the richness and diversity of wine through unique experiences. Pilar has dedicated her life to learning about and sharing the fascinating world of wine, bringing the most authentic products to consumers.
In 2022, we opened our first space in Madrid, where the passion for wine meets authentic, seasonal gastronomy and the highest quality products. Thanks to Pilar’s background-born in Argentina of Spanish winemakers and trained in France, the U.S. and England-our proposal includes wines from these regions and a select collection of international wines.
In 2024 we opened our second space. Two places where the passion for wine and the most authentic gastronomy converge and where we spread the great culture around a bottle of wine, the history behind it, the landscape, the traditions and the cultural environment.
Vinology is a tribute to the diversity and culture of wine.
Pilar Oltra
The founder
Pilar Oltra, founder and CEO of Vinology, is truly passionate about wine. With over two decades of experience, she has dedicated her life to exploring and sharing the rich wine culture. Certified as a sommelière and with WSET 3, as well as three years of studies at the prestigious Master of Wine Institute in London, she has participated in vintages in emblematic regions such as Burgundy and Argentina.
Pilar has worked as a consultant in the United States, France and Spain, and has been recognized by Forbes Magazine as one of the 100 most creative people in Spain. In 2010, she founded Vinology, a benchmark in wine events, and in 2022 she opened her first physical space in Madrid’s Salamanca neighborhood, a space for celebrating wine and gastronomy. In 2024, she opened a new location in Madrid’s Chamberí neighborhood.
Pilar, as a good Argentinian living in Spain, with the authenticity that characterizes her and her natural way of communicating, seeks to connect people through the magic of wine and create unforgettable experiences. Don’t miss the opportunity to join her exciting wine adventures!
Wine and gastronomic proposal
Our proposal focuses on a careful combination of seasonal cuisine with a select offer of more than 500 wines by the bottle and 50 by the glass, featuring the most relevant producers in Spain, without forgetting other countries such as France and Argentina.
We present an honest cuisine, rich in content and intention, which follows a seasonal journey through fresh products and traditional elaborations, all reinterpreted in Vinology’s unique style.
Our menu includes options both in the kitchen and at the bar, with dishes carefully thought out to accompany and elevate our wine selection.
